This was from today. Tried to study at home, but Seppo was too cute. Sorry in advance for the headache, filming still isn't easy. Included an easy lunch/dinner recipe (double for two people, triple for three).
Chickpea omelette (starting at 1:18)
- Mix 1,5 dl chickpea flour with cumin, turmeric, black pepper and salt according to taste. Add at least 1 dl water, until the texture is like pourable but thick yoghurt.
- Let sit for 5 minutes. Prepare whatever you want to have the omelette with. I needed to "get rid" of some stuff in the fridge, so it was like cabbage, olives, caper and tofu that I used.
- Fry the paste on a pan like you would an omelette, on both sides. When done, you can heat the filling on the same pan.
- Add some tomato paste and/or other sauce if you want and enjoy!
